Wine Review: 2008 Frank Family Vineyards Napa Valley Cabernet Sauvignon

This wine is a deep garnet color. The nose is filled with aromas of dark fruit, hints of cocoa, spice and a bit of dust (terrior http://en.wikipedia.org/wiki/Terroir). The palate has flavors of dark cherry, blackberry, cocoa, cedar (the slightly herbal flavor) and spice. This wine has some tannins, but they provide structure in the wine. It is rich and concentrated on the palate, but the Fillet Mignon for Christmas melted every bit of the tannins away, to make for a smooth drink, and satisfying pairing for  Christmas dinner. This is truly a luxurious Cabernet Sauvignon. I am no expert on cellaring, but this one could be saved for a few years. If given the chance to cellar a bottle, I'd like to see if I had the willpower to wait; the verdict is still out on that issue! I just love a steak and a glass of Cabernet Sauvignon; especially with a sprig of rosemary in the pan, when searing the meat. Rosemary in the pan, on the grill or rosemary compound butter on a steak pairs so well with Cabernet Sauvignon. This wine would also pair well with meats off the grill, beef roasts (think standing rib for a splurge), gourmet burgers, and aged cheddar and blue cheeses.  Note: This wine was a sample provided by Frank Family Vineyards http://www.frankfamilyvineyards.com SRP $49.75
