Celebrate Love Anytime

Sweet Chicken Bacon Wraps

Serves: 12-15 appetizer servings

Ingredients

1 1/4 pounds boneless, skinless, chicken breasts (about 4 breasts)
1 (1 pound) package of sliced bacon
1 cup of firmly packed brown sugar
1/4 teaspoon of Tony Chachere’s Creole Seasoning
1/8 teaspoon of cayenne pepper

Directions

Preheat oven to 350 degrees F

Cut chicken into 1 inch cubes. Cut each bacon slice into thirds. Dredge chicken into mixture, then wrap each chicken cube with bacon and secure with a wooden tooth pick. Coat a rack and broiler with nonstick kitchen spray. Place chicken on rack in broiler pan. Bake 350 for 30 to 35 minutes or until bacon is crisp.

Note: You can also use a baking pan lined with release foil paper if you don’t own a rack. With this method you may need to let the chicken wraps drain on paper towels before putting them on your serving platter.

Wine Review: 2009 Women of the Vine Chardonnay Central Coast - Alison Crowe, Winemaker

This wine is a straw color. The nose is tropical with aromas of pineapple, citrus, and honey. The palate mimics the nose with an addition of a hint of spice. Even though this wine has not seen oak, it seems to have oak integrated with the fruit. This component gives this wine structure and makes this a wine to be paired with food. I would pair this wine with roast chicken, pork roast, grilled fish and grilled shrimp. Note: This wine was a sample provided by Women of the Vine Cellars.  The SRP  is $13.99.

Wine and Food Talk

2006 Women of the Vine Syrah

I just love plain and easy to understand wine talk. Actually my wine and food style as well as my writing style is simple. Simple foods and great wines are some of the best pairings. I just recently paired Women of the Vine Cellars 2006 Syrah with a grilled steak, aged cheddar cheese and andouille sausage. All pairings were simple but delicious. The big thing was That the quality of the wine and foods were outstanding. Hint: The Aged cheddar Cheese, Andouille Sausage and Rib Eye Steaks were purchased from my local Fresh Market. I've found that the extra money I spend on "splurge" items like the ones listed above for my super wine pairings is really worth the money.

Andouille Sausage

Aged Cheddar

If you are wine and food lover and can find a group of people to talk "wine talk" you are lucky. I have to look for people to talk wine talk with due to being the only one in my very small circle who really loves wine. So you, my readers are my connection to the world of wine and food. Here is a video segment that has a nice wine discussion. I enjoyed it, and I hope that you enjoy it as well!

My Favorite Brownie Recipe

Lorrie's Luxurious Brownies

Makes about 20 brownies

2 cups of granulated sugar
1 cup of canola oil
4 large eggs
6 tablespoons of good cocoa
2 teaspoons of Folger's Classic Roast instant coffee
2 teaspoons of good vanilla (Sonoma Syrup Co.)
1 1/2  cups of self-rising flour
1 cup of chopped hazelnuts or pecans
Baking Spray (Baker's Joy)
½ cup of  chopped hazelnuts or pecans
(1)13 oz jar of Nutella (found by the peanut butter in the grocery)
Preheat oven to 325 degrees. Blend sugar, oil, eggs, cocoa, instant coffee and vanilla. Add flour. I like to add the flour in two phases to reduce flour spatter. Add nuts. Pour into a 9x13 inch baking pan sprayed with Baker's Joy or any other baking spray that has flour in it.
Bake for 25-30 minutes. Allow to cool completely. This is very important! Then spread the entire jar of nutella with the back of a big spoon. Sprinkle pecan pieces or chopped hazelnuts on top of the nutella iced brownies . Lightly press nuts into nutella. These are the best brownies that I have ever had. Note: These brownies can last for days and stay fresh if covered with aluminum foil. Enjoy!

Wine Review: 2006 Women of the Vine Syrah Napa Valley - Heidi Peterson Barrett, Winemaker

This wine has a deep, dark ruby color. The nose is filled with dark fruit flavors of plum, black cherry and spice. The palate mimics the nose with an addition of earth, toast and pepper. The mouth feel is lush and the wine is perfectly balanced with a nice long finish. This wine is a delight and paired well with a rib eye steak and rosemary roasted fingerling potatoes. This Syrah also paired well with aged cheddar cheese and spicy andouille sausage. I truly enjoyed this wine.  This wine has a SRP of $65.00.  Note: This wine was a sample provided by Women of the Vine Cellars.  http://wotv.invino.com/ref/Lorrie

Wine Review: 2006 Women of the Vine Zinfandel Mendocino County - Carol Shelton, Winemaker

This wine is a deep garnet color. The nose is filled with dark fruit, pepper and spice. The palate mimics the nose with jammy dark fruit, pepper, spice,  with an addition of hints of cocoa. This wine is nicely balanced and would pair well with any food off the grill. An ideal pairing would be with barbecue ribs. This wine has a SRP  $29.99 Note: This wine was a sample provided by Women of the Vine Cellars. http://wotv.invino.com/ref/Lorrie
